Honey is the only food that includes all the substances necessary to sustain life, including water.

This wonderfully rich golden liquid is the miraculous product of honey bees and a naturally delicious alternative to white sugar. Although it is available throughout the year, it is an exceptional treat in the summer and fall when it has just been harvested and is at its freshest. Honey sweetened beverages do not leave you feeling thirsty like white sugar does.

The fascinating process of making honey begins when the bees feast on flowers, collecting the flower nectar in their mouths. This nectar then mixes with special enzymes in the bees' saliva, an alchemical process that turns it into honey. The bees carry the honey back to the hive where they deposit it into the cells of the hive's walls. The fluttering of their wings provides the necessary ventilation to reduce the moisture's content making it ready for consumption.

Honey has long been known to have a multitude of healing powers with everything from relieving a sore throat, allergies, healing wounds and new scientific research from the University of California reveals that honey consumption raises antioxidant levels. Researchers discovered honey contained as many antioxidants - which combat the free radicals which can damage cells - as spinach, apples, oranges or strawberries which are believed to fight cancer, heart disease and other diseases. Honey, which contains a number of antioxidant components that act as preservatives, also shows promise as a replacement for some synthetic antioxidants widely used as preservatives in salad dressings and other foods.

If you have allergies, honey can be beneficial. If you eat honey that is local to your area, it may prevent your seasonal allergies. Bees use the pollen from local plants and eventually it ends up in your honey.

The composition and flavor of honey varies with the plant source of the nectar, processing and storage but a typical composition is 41 per cent fructose, 34 per cent glucose, 18 per cent water, and 2 per cent sucrose with a pH of 3.8 to 4.2.

Honey contains vitamins, minerals, and amino acids, and is a wonderful beauty aid that nourishes the skin and the hair. Honey acts as an antibacterial and anti fungal agent and helps disinfect and speed the healing process in wounds, scrapes and burns.


* Honey mixed with ground almonds makes an excellent facial cleansing scrub.
* A tablespoon of honey whisked together with an egg white, 1 teaspoon of glycerin and about 1/4 cup of flour makes an excellent firming mask. Just smooth on the face, leave on 15 minutes, and rinse off with warm water. You will be pleased with the results.
* Honey also makes a great moisturizing pack. Just mix 2 tablespoons of honey with 2 teaspoons of whole milk, smooth over the face and throat, and let it do its job for 15 minutes. Rinse off with warm water, and finish splashing with cold water.
* Honey also makes a great lotion for dry patches of skin on hands, elbows, or other parts. Just mix 1 teaspoon of honey with 1 teaspoon of olive oil and a 1/2 teaspoon of lemon juice. Apply to hands, elbows, heels of your foot, etc., and wash off after 15 minutes. Fast relief!
* Honey works well on chapped lips and for acne because it has antibacterial properties.
* To give your hair lustrous shine, mix 1 teaspoon of honey into 4 cups of warm water. Use as a hair rinse. And if you're a blond, add the juice of 1 lemon, too.
* Mix 1 tablespoon of honey with a cup of warm water. Use it as a mouthwash. Honey cleans teeth and dentures, and kills germs in the mouth.

The health benefits of honey - like all foods - depend on the quality of the honey. But in this case, the situation is even more extreme, because the pollen that collects on the bees' legs as they move from plant to plant is only as healthful and as diverse as those plants. In addition, the pasteurization of honey often removes many of the phytonutrients found in raw honey as it exists in the hive. Raw honey, for example, contains small amounts of the same resins found in propolis. Propolis, sometimes called "bee glue," is actually a complex mixture of resins and other substances that honeybees use to seal the hive and make it safe from bacteria and other micro-organisms.

Other phytonutrients found both in honey and propolis have been shown to posssess cancer-preventing and anti-tumor properties. These substances include caffeic acid methyl caffeate, phenylethyl caffeate, and phenylethyl dimethylcaffeate. Researchers have discovered that these substances prevent colon cancer in animals by shutting down activity of two enzymes, phosphatidylinositol-specific phospholipase C and lipoxygenase. When raw honey is extensively processed and heated, the benefits of these phytonutrients are largely eliminated.

Honey may be substituted for sugar in most recipes.
• It's very easy to substitute honey for sugar in your recipes. Honey is up to twice as sweet as table sugar, so you will need to reduce the amount called for in the recipe by one-third to one-half honey for granulated or table sugar. In addition, since honey is composed of up to 18% water, you will need to reduce the liquid called for in baked goods by about one-fifth.
• When baking sweets, you should also lower your oven temperature by 25 degrees F. (15 degrees C.).
• To help accurately measure, know that 12 fluid ounces of honey will equal a one-cup measure.
